We are usually racking our brains finding a dessert for a special occasion. But this time, Maddalena Riboli wants to give you her personal Italian Cream Cake recipe! According to her it is the best one for your special occasions (so of course this is true!) Indeed, this creamy cake will amaze your guests by its flavor and its presentation at the same time. Italian Cream Cake is perfect for your birthday parties and also for your other events. Not too heavy, it is a soft landing, with a glass of Maddalena white wine, after a great dinner.

INGREDIENTS

Cake

  • 2 cups all-purpose flour
  • Fresh berries
  • 1 tsp.baking soda
  • 5 egg yolks
  • 1/2 cup margarine, softened
  • 1/2 cup shortening
  • 1 cup buttermilk
  • 1 tsp. vanilla extract
  • 2 cups white sugar
  • 1 cup coconut flakes
  • 1 cup pecans, chopped

Frosting

  • 5 egg whites
  • 8 oz. cream cheese
  • 1/2 cup margarine, softened
  • 1 tsp. vanilla extract
  • 4 cups confectioner’s sugar
  • 1/2 cup pecans, chopped

 

DIRECTIONS

  1. Preheat oven to 350°F (175 °C). Grease and flour three 8 in.round cake pans.
  2. Beat egg whites until stiff peaks form.
  3. In a large bowl, cream 1/2 cup margarine and shortening until light. Add white sugar, and beat until fluffy. Beat in egg yolks. Stir together flour and baking soda, and add buttermilk into the creamed mixture; mix well after each addition. Stir in 1 teaspoon vanilla, 1 cup coconut, and 1 cup pecans. Fold in stiffly beaten egg whites. Spoon into prepared pans.
  4. Bake for 25 to 40 minutes. Remove to wire rack to cool completely.
  5. to make frosting, combine cream cheese, margarine, confectioner’s sugar, and vanilla in a mixing bowl. Beat until smooth. Frost cooled cake. The remaining pecans can be stirred into frosting or sprinkled onto the cake after it is frosted. Decorate with fresh berries.
